Avocado Chicken Salad
- 2 boneless, skinless chicken breasts
- 1 avocado chopped
- 1/4 onion, chopped
- juice of 1/2 lime
- 2 tbsp cilantro
- salt and pepper to taste
1. Cook chicken breast until done. Let cool and shred.
2. Mix all ingredients together. Serve on whole grain, rye, or wheat bread. I like to have mine on a whole grain sandwich thin.
