Avocado Egg Salad
- 2 hard boiled eggs, chopped
- 1/2 avocado, mashed
- 1 tbsp greek yogurt
- 3/4 tsp apple cider vinegar
- 1/2 tsp cayenne pepper
- salt to taste
1. Mix all ingredients together. Serve on whole grain, rye or wheat bread. I like to have mine on whole grain sandwich thins.
2. Store left over in refrigerator up to 2 days.
