Baked Sweet Potato

• 1 sweet potato
• avocado oil, coconut oil or olive oil cooking spray
• low-far shredded cheese

1. Wash sweet potato. Pierce holes with fork all over potato. 

3. Spray lightly with cooking spray and wrap tightly in foil. 

4. Bake for about 1 hour. Sprinkle lightly with cheese.
