Banana Greek Yogurt Muffins
- 1 cup plain non-fat greek yogurt
- 2 ripe bananas
- 2 egg whites
- 2 cups quick oats
- 1/4 cup pure honey
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup dark chocolate chips
- 2 cups fresh spinach
- 1/4 cup almond milk
1. Preheat oven to 400 degrees and spray muffin pan with olive oil spray.
2. Add all ingredients except chocolate chips to a blender and blend until smooth. Fold in chocolate chips.
3. Pour batter into muffin pan and cook 20 minutes.
* These make a great snack or quick breakfast. You can also keep these in the freezer and pop them in the microwave for 1 minute when you feel like having one!
