Banana Nut Pancakes
- 1 1/2 cup all purpose flour
- 1/2 cup old fashioned oats
- 2 tsp baking powder
- 2 ripe bananas, smashed
- 1 cup plain greek yogurt
- 1/2 cup low fat milk
- 2 tbsp vegetable oil
- 2 large eggs
- pure maple syrup, for serving
- chopped walnuts, for serving
1. Preheat oven to 200 degrees. In a large bowl, combine flou, oats, and baking powder.
2. In a large glass measuring cup, whisk together bananas, yogurt, milk, vegetable oil and eggs.
3. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
4. Lightly coat nonstick skillet with baking spray. Scoop 1/4 cup batter for each pancake and cook until bubbles appear, About 2 minutes each side.
* This recipe you can make even healthier by substituting the all purpose flour with wheat, oat, or quinoa flour. Also the milk for almond milk or fat free milk and the eggs with egg whites
