Banana Power Pancakes

  • 2 egg whites
  • 1 ripe banana
  • 1 tbsp fat-free yogurt
  • 1 tbsp natural almond butter
  • 1/2 tsp cinnamon
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • 1/4 tsp baking soda

1. Mash banana in medium sized mixing bowl. Add two egg whites and continue mashing to mix. 

2. Add yogurt and almond butter. Continue to mix. Add cinnamon, chia seeds, flax seeds and baking powder. Mix until all ingredients are combined. 

3. Spray small skillet with olive oil cooking spray and heat over medium high heat. Pour batter onto skillet. Cook for 2-3 minutes each side. Do this for remaining batter. 

* Makes about 4 pancakes. These were so good, no pure maple syrup was even needed!
