Chicken Parmesan
- 4 8oz chicken breast, sliced in half to make 8
- 3/4 cup seasoned whole wheat bread crumbs
- 1/4 cup grated parmesan cheese
- 2 tbsp butter, melted (or extra virgin olive oil)
- 3/4 cup reduced fat mozzarella cheese
- 1 cup marinara
- olive oil cooking spray
1. Preheat oven to 450 degrees. Spray large baking sheet with spray.
2. Combine bread crumbs and parmesan cheese in a bowl. Melt butter in another bowl. Lightly brush butter onto chicken. Dip into breadcrumb mixtue. Place on baking sheet and repeat with remaining chicken.
3. Lightly spray a little more olive oil on chicken. Bake for 15 minutes, turn chicken and bake for 5 more minutes.
4. Remove from oven. Spoon over 1 tbsp marinara over each piece of chicken. Top with 1/2 tbsp shredded mozzarella cheese.
5. Bake 5 more minutes until cheese is melted.
* I like to serve this with my new found love, quinoa pasta! I got this recipe from skinnymom.com. I found I had too much of the bread crumb mixture and wasted it. Next time I will probably cut the ingredient in half for the parmesan cheese and bread crumbs.
