Chicken Veggie Pasta
- 1.5 lbs whole wheat pasta of choice
- 2 green peppers, chopped
- 1/2 large onion, chopped
- 1 lb. ground chicken
- 12 oz. organic tomato sauce
- 1 tbsp extra virgin olive oil
1. Bring large pot of water to a boil and cook pasta according to package, usually 10-12 minutes. During this time, heat organic tomato sauce in sauce pan over low heat.
2. While pasta is cooking, chop onion and green peppers. Heat 1 tbsp extra virgin olive oil or coconut oil, peppers and onions in skillet over medium heat. Do not burn, just heat up!
3. In a separate skillet, cook ground chicken until browned over medium heat. Once fully cooked, add onions and peppers. Mix well and keep heat on low until pasta is thoroughly cooked.
4. Mix cooked pasta, veggie/chicken mixture and tomato sauce together in a large bowl. Enjoy!
* This recipe is great to make for a big dinner or to keep some as left overs for quick dinners or lunches!
*Try adding other veggies like mushrooms, zucchini, broccoli, and different colored peppers to make it colorful!
