Chocolate Chip pumpkin bread
- 1/3 cup Extra Virgin Olive Oil
- 2 large Egg
- 1/2 cup Honey
- 1 cup Pumpkin Puree
- 1/4 cup Almond Milk
- 1 1/2 tsp Pumpkin Spice blend (or 1/2 tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp ground nutmeg, 1/4 tsp allspice)
- 1 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Mini Chocolate Chips (can also substitute any nut, raisins, etc)
- 1 3/4 cup Whole Wheat Flour
1. Pre-heat oven to 325 degrees Fahrenheit and lightly spray a 9x5 loaf pan with coconut oil spray or olive oil spray.
2. In a large bowl, mix olive oil and honey together.
3. Add eggs, pumpkin puree, milk, pumpkin spice, baking soda, vanilla extract, and salt. Mix to blend.
4. Stir in whole wheat flour.
5. Pour batter into greased loaf pan and bake for 55-60 minutes. Let cool for 10-20 minutes before slicing. Makes 10.
