Chocolate Chip Pumpkin Oatmeal Cookies

  • 3/4 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup whole wheat flour
  • 1 1/2 cup quick cooking oats
  • 1/4 cup brown sugar
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup dried cranberries


1. Preheat oven to 350 degrees. Line baking sheet with parchment paper. 

2. In a small mixing bowl, whisk together pumpkin, egg and vanilla until well combined. 

3. In a larger mixing bowl, combine remaining ingredients. Fold together wet and dry ingredients until just combined. The cookie dough will be very thick. 

4. Drop spoonfuls on cookie sheet and bake for 14 minutes, until lightly browned. All to cool.
