Coconut Crusted Sweet Potatoes
- 1 large sweet potato, peeled and diced
- 2 tbsp organic shredded coconut
- coconut oil cooking spray or 1 tsp coconut oil
1. Heat oven to 375 degrees and spray baking sheet with coconut oil spray.
2. Place sweet potatoes chunks and shredded coconut in ziplock bag. Add olive oil or spray olive oil spray into bag.
3. Close ziplock bag and shake until all ingredients are evenly distributed.
4. Place sweet potatoes on baking sheet. Bake for 20-25 minutes until fully cooked through.
* This is an easy quick way to mix up the taste for your sweet potatoes. I know I eat them often and just a baked sweet potato, salt, garlic, etc can get repetitive and boring. I sweet potato will usually serve 2 people.
