Eggplant Vegetable Medley
- 1 small eggplant
- 1 small sweet potato
- 1/2 cup chopped onion
- 1/2 cup chopped pepper
- 1 tbsp extra vigin olive oil, avocado or coconut oil
- 1 cup chopped broccoli
- salt to taste
1. In a large grill skillet, or regular skillet, heat oil over medium high heat. Add broccoli and sweet potato. Cook, mixing often, for about 5-7 minutes.
2. Add onions and peppers. Cook until onions are fully cooked. Turn heat to medium and add eggplant and salt. Cook about 5 more minutes, mixing ingredients.
* This is so simple and delicious. Just add a few different veggies and you've got yourself a big healthy side dish. This mix of veggies tasted awesome with just a little of salt but try adding different spices for a variety of flavors: cumin, cayenne pepper, garlic, etc.
