Lemon Pepper Crusted Fish
- 3 white fish fillets, any type desired
- 2 egg whites
- 1 tbsp lemon juice
- 2 tbsp grated parmesan cheese
- 1/4 cup whole wheat flour
- pepper to taste (or lemon pepper seasoning)
1. Preheat oven to 375 degrees. Lightly grease baking sheet with olive oil spray.
2. In a shallow bowl, mix egg whites and lemon juice.
3. In a separate shallow bowl, toss together parmesan cheese and whole wheat flour.
4. Place one fillet in egg mixture and turn to coat. Place in wheat mixture and turn to coat completely with mixture. Place on baking sheet and repeat with remaining fillets. Sprinkle additional pepper on top of fillets.
5. Place baking sheet in over for 25 minutes.
* This is a nice light dish filled with lots of protein!. Pair with some veggies for an even healthier dish!
