Lime Vinaigrette
- juice of 2-3 limes (or 1/4 cup)
- 1 tbsp natural honey
- 1 tsp dijon mustard
- 1 garlic clove, minced
- 1 tsp salt
- 2/3 cup olive oil
- 3 tbsp chopped fresh cilantro leaves
1. In a blender, combine lime juice, honey, mustard, garlic and salt. Blend on medium for a fw seconds and reduce speed to low.
2. With blender running, slowly add oil until emulsified. Pour into container or jar and mix in cilantro. Keep in refrigerator up to one week.
