Pineapple Cucumber Couscous
- 1 cup couscous, cooked
- 1 cup fresh pineapple, diced
- 1/4 cup lime juice
- 1/4 cup cayenne pepper
- 1 tsp grass-fed butter
- 1 cup cucumbers, diced
- 1 1/2 tbsp extra virgin olive oil, avocado oil or coconut oil
- 1/4 tsp salt
1. In a medium saucepan, bring 1 cup water, 1 tsp butter and 1/4 tsp salt to a boil.
2. Add couscous, stirring quickly. Remove saucepan from heat and cover.
3. Let couscous stand 4-5 minutes and fluff with fork.
4. Add lime juice, extra virgin olive oil, cayenne pepper, diced cucumber and diced pineapples to couscous.
5. Gently mix all ingredients together, making sure the couscous is evenly covered.
* Eat warm or chilled.
