- 1/2 cup cooked quinoa
- 1/8 chopped avocado
- 1/2 cup cucumber and tomatoes
- 1/2 tsp extra virgin olive oil or avocado oil
- 1 tsp lemon juice
- 1 tsp dijon mustard
- pinch of salt
1. Cook Quinoa according to package.
2. Combine all ingredients together.
* I was making this the other day and tossed a few no sugar added raisins on top. It gave it a different and sweeter taste. You can also add cayenne pepper to make it a little spicy or add other vegetables and leafy greens if desired.
