Quinoa Stuffed Tomatoes
- 4 tomatoes
- 1 cup cooked quinoa
- 1 avocado, diced
- 1/2 onion diced
- 1 tsp olive oil or avocado oil
- 1 tsp dijon mustard
- 1 tsp chili powder
- 1/2 cup canned corn
- 1 tsp salt
- 1 tsp garlic powder
- shredded low-fat cheese
1. Preheat oven to 350 degrees and lightly spray baking sheet with non-stick olive oil spray.
2. Slice open top of each tomato and carve out center. Reserve center and place in mixing bowl.
3. Mix reserved tomato center with all other ingredients and stuff in tomatoes. Sprinkle with cheese.
4. Bake 20-25 minutes.
* I made these on a whim. I just decided to experiment with whatever ingredients I had in the refrigerator and these came out ah-mazing!
