Roasted Potato Wedges
- 2 small russet potatoes
- 1 tbsp extra virgin olive oil or avocado oil
- salt and pepper to taste
- 2 tbsp grated parmesan cheese
1. Preheat oven to 400 degrees. Wash and dry potatoes. Cut into quarters. Cut each quarter into 3 1 inch wedges and place in ziplock bag.
2. Add olive oil, salt, pepper and parmesan cheese to bag. Close and shake until well coated.
3. Spray non-stick olive oil cooking spray on baking sheet. Place potato wedges on baking sheet and roast for 35 minutes, flipping halfway through.
