Salsa Chicken
- 1 lb boneless, skinless chicken breast
- 1/2 can organic black beans
- 1/2 can corn
- 1 jar salsa
- 1/2 packet low sodium taco mix
1. Place chicken in slow cooker.
2. Mix remaining ingredients in a bowl and pour over chicken.
3. Cook on low 6-8 hours.
* You can also shred this in the end to make phenomenal healthy tacos!! Just use a whole wheat or whole rain wrap and you're good to go! Try it with my home made guacamole ;)
