Sweet Chili Lamb Stir-Fry
- 1 lb. lamb
- 1 cup cooked vermicelli noodles
- 1 6oz jar sweet chili sauce (i used Sharwood's)
- 2 cups chopped broccoli
- 1 cup shredded carrots
- 2 cups fresh spinach
- 2 cups chopped broccoli
- extra virgin olive oil
- 1/2 cup edamame
1. Preheat oven to 400 degrees. Spray baking sheet with olive oil spray. Place lamb on baking sheet and bake in oven 40 minutes. While lamb is baking, chop and organize veggies.
2. Lightly spray large skillet with olive oil spray and heat over medium high heat. Add broccoli and mushrooms. Stir about 3 minutes. Drizzle a little of extra virgin olive oil over veggies and stir to mix. Continue to cook 5 more minutes.
3. Add carrots, edamame and spinach. Mix until spinach begins to wilt.
4. Remove lamb from oven when fully cooked. Dice lamb into bite sized pieces and add to skillet with veggies.
5. Pour half of chili sauce into skillet and mix well. Add cooked vermicelli noodles and remaining chili sauce. Mix well until sauce is well distributed.
* This recipe is great because you can add any of your own favorite veggies or even substitute the protein. Instead of lamb you can choose shrimp, chicken or even tofu. Other possible veggies are tomatoes, onions, peppers, zucchini, corn etc. Whatever you feel like or have in the kitchen, this turns out great!
