Sweet Potato Hummus
- 1 cup sweet potatoes, peeled and diced
- 1 can garbanzo beans, rinsed and drained
- 2 tbsp fresh squeezed lemon juice
- 1/4 cup tahini
- 5 cloves garlic
- 1 tbsp extra virgin olive oil
- 1/2 tsp cumin
- 1 tsp salt
- water
1. Steam, bake or microwave potatoes until soft. (microwave for 10 minutes)
2. Transfer potatoes to food processor. Add beans, lemon juice, tahini, garlic, olive oil, cumin, salt and 2 tbsp water. Pulse until smooth. Add water if mixture is too thick. Sprinkle paprika if desired.
