Zucchini Fritters
- 1 zucchini, grated
- 4 egg whites
- 1/2 cup whole wheat flour
- 1 tbsp garlic powder
- 1 cup fresh spinach, chopped
1. Heat non-stick skillet over medium heat. Mix all ingredients together in a bowl.
2. Pour batter onto pan to form cakes. Cook on each side until golden brown, about 3-4 minutes.
* This recipe is so versatile and healthy. You can top this with yogurt or applesauce. Add in extra veggies such as carrots, corn, beans and other herbs.
