Sweet Potato and Egg Salad
- 2 small sweet potatoes, peeled and cut into 1/2 inch pieces
- 2 tbsp coconut oil
- 5 hard boiled eggs, peeled and diced
- 1 cup diced ham
- 2 tbsp diced chives
- 2 tbsp paleo mayo
- salt to taste
1. In a large skillet, heat coconut oil over medium heat. Once the oil is hot, add cut up sweet potatoes and saute until brown and tender. Removed from heat and set aside.
2. In a large mixing bowl, add the diced eggs, ham and chives. Mix well.
3. Add the cooked sweet potatoes, mayo and salt. Mix well .
* This is one of my favorite recipes! It's so good and so health. I love having this as a side and then leftovers as it's own meal for lunch. It even tastes good cold! PS picture was taken in KSA (no ham) :(
